Yes. Eating restores a lot of health in GTA 6, and the Extended Look shows Jason eating chips to heal. Eat too much and Jason or Lucia will put on weight.
Food works much like it did for Arthur in Red Dead Redemption 2. IGN noticed that items in Jason and Lucia's fridge carry icons, including the eye icon used for the new slow-motion Focus ability and a bolt that may relate to stamina, so different foods likely refill different meters.
Overeating adds weight, and going to the gym builds muscle and strength. Both can be done alone or as a couple.
Rockstar has not said whether you must eat to survive. Everything shown so far presents food as a way to heal and to shape how your characters look.
