There is nothing to cross-play at launch, because GTA 6 ships as a single-player game. Rockstar has said nothing about crossplay for any future online mode, so that part is unknown.
Crossplay only matters once there is a multiplayer mode, and Rockstar has not announced one. Some guides already predict crossplay for a future GTA 6 online mode. That is a guess, not something Rockstar has said.
The PlayStation Store notes that online features need a PlayStation account. That is standard store wording and doesn't point to a multiplayer mode.
Cross progression (carrying a save between PS5 and Xbox) has not been mentioned either. If you plan to switch consoles, assume your save stays on the platform you bought on until Rockstar says otherwise.
